Ingredients:
- ¼ cup unsalted butter
- 3 cups pancake mix
- 2 cups milk (of choice)
- 2 large eggs
- toppings such as mini chocolate chips, blueberries, bananas, strawberries, shredded coconut
- maple syrup for serving
Method:
Preheat the oven to 400°F. Place the butter on a half sheet tray and transfer it to the oven until melted. Remove the tray from the oven and tilt it gently to evenly coat the entire surface with the melted butter. Set aside.
In a large bowl, whisk together the pancake mix, milk, and eggs until well combined. Pour the batter on to the prepared pan and spread evenly using a spatula. Add toppings to the batter and place in preheated oven on center rack.
Bake for 15-20 minutes or until the pancakes are golden brown. Remove from oven and cut into squares. Serve with maple syrup and blueberry compote.
