Yield: 16 truffles
Ingredients:
- 1 ½ cup pitted medjool dates ~10 – 12 dates
- 1 cup cashews
- 2 tbsp ground flax
- ⅓ cup unsweetened cocoa powder
- ½ cup unsweetened shredded coconut flakes
- 1 tsp vanilla extract
- 2 tbsp water
- ¼ tsp salt
- ⅓ cup finely shredded coconut flakes
Method:
Add pitted medjool dates, cashews and ground flax to a food process and process until they combine into a ball.
Add remaining ingredients and process until evenly combined. Feel the mixture with your fingers, it should easily stick together. Roll dough into 2 tbsp size balls and coat in extra finely shredded coconut flakes.
