Recipe: Chocolate Coconut Energy Truffles 

Yield: 16 truffles

Ingredients:

  • 1 ½ cup pitted medjool dates ~10 – 12 dates

  • 1 cup cashews 

  • 2 tbsp ground flax 

  • ⅓ cup unsweetened cocoa powder

  • ½ cup unsweetened shredded coconut flakes

  • 1 tsp vanilla extract

  • 2 tbsp water

  • ¼ tsp salt

  • ⅓ cup finely shredded coconut flakes

Method:

Add pitted medjool dates, cashews and ground flax to a food process and process until they combine into a ball.

Add remaining ingredients and process until evenly combined. Feel the mixture with your fingers, it should easily stick together. Roll dough into 2 tbsp size balls and coat in extra finely shredded coconut flakes.
