Recipe: Buffalo Chicken Dip

Yield: 8 servings

Ingredients:

  • 1 8oz package light cream cheese, softened (or Neufchâtel)

  • 1/2 cup buffalo sauce

  • 1/2 cup plain Greek yogurt

  • 1 tbsp ranch seasoning

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 2.5 cups of finely shredded cooked chicken (or use rotisserie chicken)

  • 1/2 cup shredded mozzarella cheese

  • 1/2 cup chopped scallions, reserve greens for topping

  • 3/4 cup shredded cheddar cheese for topping

Method:

Preheat oven to 450 degrees. Add the cream cheese, buffalo sauce, greek yogurt, ranch seasoning, garlic powder and onion powder to a large bowl. Mix until everything is well combined, it is okay if there are a few lumps. Then add the chicken, mozzarella and scallions. Fold it all together until well mixed.

Place the dip mixture into a casserole dish and top with shredded cheddar cheese. Bake for 10-15 minutes until the dip is hot, bubbly and golden brown on top.
