Matzo Bark with Date Caramel
Yield: 16 pieces
Ingredients:
4 pieces of matzah
1 cup chopped chocolate (from chocolate bar)
1 tbsp coconut oil
½ cup shredded coconut
Flakey salt
1 cup pitted dates
½ cup tahini
1 teaspoon vanilla extract
6 tablespoons milk of choice
Pinch of cinnamon and cardamom (optional)
Method:
Place dates in a bowl. Cover the dates with boiling water and allow to soak for a least an hour. Drain water from dates.
In a food processor or blender, add the soaked dates, tahini, vanilla, milk and spices. Process until the dates are broken down and they form a smooth paste.
Place 4 pieces of matzah on a large baking sheet lined with parchment paper, breaking the matzah as needed to fit. Spread the date caramel out edge to edge. Freeze for at least an hour.
Melt chocolate in 30 second intervals in the microwave. Add the coconut oil and stir until chocolate is fully melted. Remove the matzah bark from the freezer and spread the chocolate quickly, as it will set very fast. Sprinkle on coconut and flakey salt. Place back in the freezer to set.
Cut or break the matzah bark and serve cold.
